Almond Herb Goat Cheese
Ingredients
- 1/3 cup Lightly Salted almonds
- ½ Tbsp fresh Italian parsley, minced
- 1 tsp fresh thyme, minced
- 1 tsp fresh rosemary, minced
- 1 tsp lemon zest
- ¼ tsp ground black pepper
- 1 (8-oz) log of soft goat cheese
Instructions
Using a food processor or mini-chopper, pulse almonds until finely ground. In a small bowl, combine the almonds with the parsley, thyme, rosemary, lemon zest and black pepper.
Spread almond-herb mixture on a piece of wax paper or plastic wrap.
Roll goat cheese log in mixture until well coated.
Serve with crackers or slices of toasted baguette.
