Buffalo Chicken Quesadillas

Ingredients

• 2 tbsp olive oil
• 1 lb chicken breasts cut into small pieces, boneless and skinless
• 1/4 tsp salt
• 1/4 tsp pepper
• 1/4 cup buffalo wing sauce
• 4 large tortillas
• 1/2 cup blue cheese crumbled
• 2 cups Mexican shredded blend cheese

Directions

1. Preheat your oven to 425 degrees F.
2. Heat the olive oil in a skillet add the chicken pieces
3. Add salt and pepper and cook for 5 minutes until chicken is not pink.
4. Place the chicken to a bowl and add the Buffalo wing sauce. Toss well.
5. Add 1/4 of the chicken to a large tortilla
6. Spread it over half of the tortilla and sprinkle the blue cheese and about 1/2 cup of the Mexican cheese. Fold and gently press down.
7. Place the prepared quesadillas on a baking sheet. Put the baking sheet in the oven and bake for 8 to 10 minutes. Turn them half-way through.
8. Remove from the oven and cut in half.
