Huitlacoche And Oaxaca Cheese Stuffed Chicken
Ingredients
- 1 tablespoon of oil
- 1/4 of piece of onion finely chopped
- 1 clove of garlic finely chopped
- 2 cups of huitlacoche corn mushroom tin
- 3 leaves of epazote
- 1/2 Cup of corn
- 800 grams of chicken Milanesa (breaded)
- 2 cups of Oaxaca cheese shredded
enough of oil - 190 grams of cream cheese
- 1 Cup of Nestle media creama
- 1/2 Cup of evaporated milk
- 1 Cup of poblano pepper in rajas
- 1 teaspoonful of onion powder
- to taste of Butter
- to taste of corn kernels to garnish
- to taste of salt and pepper
Directions
- For the filling, cook the onion, garlic, huitlacoche, epazote and corn kernels on the oil for 10 minutes, season with salt and pepper. On a board place the chicken fillets and fill with the previous preparation and a little cheese, roll and close with a toothpick.
- Heat a pan with oil and cook the chicken until golden brown. Set aside.
- For the sauce, blend the cream cheese with the half cream, the evaporated milk, the poblano rajas, and the onion powder.
- In a saucepan add the butter and the sauce, bring to a boil and cook for 5 minutes more.
- Serve on a plate, with a thin layer of sauce as a base and place the chicken, cover with salsa and decorate with corn.
