Carne Asada with Oaxaca Cheese
Ingredients
- 4 4-6 ounces each filet mignon
- 2 slices Oaxaca cheese
- sea salt
- black pepper
- grape seed oil
- 8 ounces Salsa Verde
- 8 ounces Guacamole Salsa
Directions
- Preheat grill.
- Lightly coat filets with grape seed oil and season with salt and pepper on each side.
- Grill steaks about 8 minutes per side (5 minutes per side for rare), basting with Salsa Verde.
- Once seared, transfer to sauté pan with Salsa Verde. Top with Oaxaca cheese and place in oven until cheese melts.
- Remove steaks from oven and transfer to plate. Spoon Guacamole Salsa over filets.
