Ingredients

• 4 slices bacon, chopped
• 1 medium onion, diced
• 1 can (4 oz.) roasted and diced green chiles, drained
• 1 tbsp butter
• 1 tbsp flour
• 1 1/2 cup whole milk
• 2 cups Cheese Oaxaca

Instructions

In a medium skillet sauté bacon on medium heat until almost crispy. Add onion and cook until onion is translucent and bacon is crispy. Remove from heat. Drain. Add green chiles and stir to combine.

In a medium saucepan melt 1 tablespoon butter on medium-low heat; whisk with flour to create a paste. Cook for a minute. Slowly add 1 cup of milk while continuing to whisk until the paste has fully dissolved and the mixture is smooth.
Gradually add cheese a little at a time while continuing to whisk. Add a little more milk as you go if necessary to help make the cheese less stringy. Add bacon, onion and chile mixture retaining two tablespoons for garnish, and stir to incorporate.

Pour into a serving dish and garnish with remaining bacon mixture. Serve warm with tortilla chips.
